Healthy recipe: Try fibre-rich ragi vegetable idli this weekend

Ragi is packed with fibres which ensure fullness and gives a feeling of satiety. It is a good source of calcium and potassium. Ragi idli is not just nutritious but also delicious. To make this dish healthier, tastier and wholesome, adding vegetables such as green peas, carrot, and French beans makes it yet more perfect. Chutney is an excellent side dish with Idli. Its main ingredient Mint is very popular especially in the use of chutneys contains plenty of vitamins. Sambar is a rich source of proteins and nutrients. Mint chutney and sambar is a perfect combination with Idli. Here's why eating idli is a healthy idea!

Ragi Idli

Ingredients:

  • Ragi flour- 1 Tsp
  • Rice (raw)- 1 tbsp
  • Urad dal (raw)- 1 tbsp
  • Mixed veggies (e.g. Finely chopped/grated Red/yellow/green bell pepper, carrots)- 1/2cup
  • Green chillies- 1
  • Salt- as per taste
  • Oil- 1/4th tsp (to grease)

Method:

  1. Soak urad dal and rice separately for about 4 hours and grind together to form a smooth paste.
  2. Add the ragi flour to the paste and mix well.
  3. Add salt to the paste and keep it overnight for fermentation.
  4. Keep the consistency same as regular Idli batter.
  5. Add mixed veggies and green chillies into the batter and mix well.
  6. Grease the idli moulds with little oil and pour the batter in them. Steam for about 20 minutes.

Ingredients:

  • Fresh coriander (cilantro) leaves- 2 katoris
  • Fresh mint leaves- 2 tbsp
  • Onion- 1 small
  • Garlic- 4 cloves
  • Fresh ginger- 1/2inch
  • Green chilli- 1 (or as per taste)
  • Fresh lemon juice - 1 tbsp
  • Cumin seeds- 1 tsp
  • Salt- as per taste
  • Water- 2-3 tbsp (as needed to make desired consistency)

Method:

  1. Remove the tough stalks of the fresh herbs (coriander & mint leaves)
  2. Blend/puree all ingredients, as mentioned above, to a smooth consistency.
  3. Serve as condiment, dip or spread.

Ingredients

  • cup toor dal
  • 3 teaspoons coriander seeds
  • teaspoon black peppercorns
  • teaspoon methi seeds
  • 1 tablespoon channa dal
  • 4-6 dried red chillies (optional)
  • 2 teaspoons oil
  • Other ingredients for sambar
  • cup shallots or 2 onions, chopped
  • 1 big tomato, chopped
  • 1 small bell pepper, cubed
  • 3 tablespoons thick tamarind juice
  • teaspoon turmeric powder
  • 10 curry leaves
  • 1 teaspoon mustard seeds
  • Salt

Method:

1. Heat 2 teaspoons oil in a pressure cooker. Once the oil is hot fry 3 teaspoons coriander seeds, teaspoon black peppercorns, teaspoon methi seeds, 1 tablespoon channa dal, 4-6 dried red chillies (optional). Fry till golden brown. Now add cup toor dal and saute for 2 minutes. Let cool for 5 minutes. Reserve the oil in the same cooker.

2. Once cooled down, grind the fried ingredients into a thick paste. Add just enough water to make a paste.

3. Now heat the reserved oil again the same cooker. temper with mustard seeds and curry leaves. Add shallots, chopped tomatoes and chopped bell peppers. Saute for 2 minutes. Add turmeric powder and saute well. Add the tamarind extract and mix well.

4. Add the ground masala and mix thoroughly. Add 2 cups water and required salt. Mix well and close the cooker. pressure cook for 10 minutes or up to 4 whistles. Once the pressure is released check the consistency of sambar. If it is too thick for your liking add -1/2 cup water and bring to a boil. Add cilantro leaves and serve sambar.
