Healthy Recipe: Thai corn chaat

When its a recipe by Chef Ranveer Brar, its a given that its healthy! Whether it is a healthy dinner recipe or a quick-fix breakfast, I know I can use any of his recipes and not worry about it being unhealthy. This particular recipe of Thai Corn Chaat is my ultimate snack recipe. Thai with a chaat-ful twist -- how can you not like it? Love Thai food? You should try the Thai red mock chicken recipe. Don't be intimidated by the long list of ingredients, everything is usually available in every kitchen, and apart from that, the recipe can be whipped up quickly. So here goes.

Ingredients

  • Thai curry paste: 1 tsp
  • Finely chopped red chilli: tsp
  • Finely chopped green chilli: tsp
  • Crushed peanuts: 2 tsp
  • Finely chopped coriander: 2 tsp
  • Powdered sugar: tsp
  • Salt to taste
  • Crushed black pepper: to taste
  • Fish sauce: 2 tsp
  • Sweet chili sauce: 2 tsp
  • Oil: 1 tbsp
  • Thai basil leaves: 1 tsp
  • Lime leaves: 4 to 5
  • Cucumber cubes: cup
  • Finely chopped red, yellow and green bell peppers: cup
  • Boiled corn: cup
  • Sweet lime wedges: 5 6 nos.
  • Seedless jamun: 1 tbsp
  • Fried rice noodles: cup

For garnish:

  • Fried rice noodles: as required
  • Red chilli powder: as required
  • Mint leaves: 3 - 4 nos.

Method:

  • In a bowl add Thai curry paste, finely chopped red chilli, finely chopped green chilli, crushed peanuts, finely chopped coriander, powdered sugar, salt, crushed black pepper, fish sauce, sweet chilli sauce and oil and mix.
  • Cut the Thai basil leaves and lime leaves. Add these in a bowl and then add cucumber cubes, finely chopped red, yellow and green bell peppers, boiled corn, sweet lime wedges and seedless jamun and mix.
  • In another bowl add the fried rice noodles and add the thai corn chaat.
  • Garnish with fried noodles and mint leaves. Sprinkle red chilli powder.
