Spring pea pasta is delicious recipe with healthy ingredients. Whole wheat pastas are full of fiber which makes you feel full. Addition of chicken/ turkey enhances its protein content. Ricotta cheese is low in fat and calories.

Ingredients

  • Whole wheat Pasta 15 gms
  • Chicken/ Turkey shredded- 20 gms
  • Peas 30 gms
  • Ricotta cheese- 10 gms
  • Fresh flat-leaf parsley leaves- 1 tsp.
  • Spring onion- 2 tbsp.
  • Oregano- 1tsp.

1. Bring 1 cup water to a boil in a stockpot over high. Add 1 salt; return to a boil. Add pasta; boil, stirring occasionally, until al dente, about 8 minutes. Add boiled chicken/ turkey. Stir in peas, and cook 2 minutes. Drain pasta mixture, reserving 1/2 cup cooking water.

2. Return pasta mixture to pot. Add ricotta, parsley, butter, spring onion, oregano, and reserved cooking water; stir to coat. Serve immediately.
