Healthy recipe: Roti noodles with chicken and vegetables

All through my college, I took pride in the fact that I never weighed a gram over 57 kgs. However, once I started working and lead more of a sedentary lifestyle, things weren't that rosy anymore. Not only did I start gaining weight, but even my energy levels dipped. A quick introspection told me that all I had to do was start a fitness routine and eat right. So I stopped eating biscuits, white bread and most processed food, and focussed on eating more of healthy foods. Of course, I could not eat boring food, so that's why I started experimenting with recipes and came up with this gem -- roti noodles. It tastes exactly like flat noodles and you can use it in any recipe of your choice. I make it Chinese style, with shredded chicken and vegetables.

Ingredients

Roti or chapati -- 4

Boiled and shredded chicken -- 1/2 cup

Julienned vegetables (carrot, capsicum, broccoli, etc.) -- 1/2 cup

Oil -- 1 teaspoon

Soya sauce -- 1.5 teaspoon

Chilli sauce -- 2 teaspoon

Vinegar -- a dash

Salt and black pepper as per taste

Oregano (optional)

Method

1. Roll up the rotis and cut in strips, to resemble noodles.

2. In a wok, heat the oil and add chicken and vegetables. Sautee.

3. Add the seasoning, sauces and vinegar.

4. Add the 'noodles'. Cook till the vegetables are done.

5. Sprinkle oregano and serve.

There you go, eating healthy doesn't get easier than this! This recipe only takes minutes to make and is a hit. I have served this to many of my friends and they all love it. You will too! Try this and let me know how it turns out.
