Here's the perfect lunch-box meal for kids, and perhaps adults too. Colourful and yummy, you won't hear them say no to it. Rich in folate and manganese, beetroot is known to increase blood flow, reduce blood pressure and also help build physical stamina. The carrots bring the goodness of a variety of minerals and vitamins that aid overall health. While the rice gives you a healthy dose of carbs (we'd definitely recommend red or brown rice), the peas, one of the most nutritious legumes are a good source of protein. They can help cut cholesterol, and even protect you against a host of diseases like cancer.

Step 1: Cook rice with salt. Make sure its grainy.
Step 2: Cook peas and carrot separately. Don't overcook them, they ought to be a little crunchy.
Step 3: In a pan, heat oil. Add cumin seeds, ginger, garlic paste and onion, and saut till onions turn golden brown.
Step 4: Add grated beetroot and saut for a few minutes, until it's cooked.
Step 5: Add sambhar powder, mint leaves, green chillies, salt and stir for a few minutes.
Step 6: Stir in the cooked veggies and rice. Mix well.
Garnish and serve hot with some raita on the side.
You can make this nutritious meal in under 5 minutes; just plan ahead. Cook rice and veggies the previous night and store in the refrigerator.
