Be it a puja, get-together or any festival, the celebrations are incomplete without a kheer. If it is healthy and tasty, then what else do you need to satiate your sweet tooth after a stomach full of delicious meal. So this season, try your hands at not just rice kheer but rice and moong dal kheer. Here is the detailed recipe about how to make rice moong dal kheer at home. You can also try this healthy oats and carrot kheer recipe.
Ingredients:
Rice - 1/2 cup
Yellow split Moong dal - 1/4 cup
Milk - 2 cups
Jaggery - 1/2 cup
Cardamom powder - 1/2 teaspoon
Ghee - 2 teaspoon
Water - 3 cups
Saffron strands - Pinch (soaked in some warm milk)
Cashewnuts - 1 teaspoon
Almonds - 1 teaspoon
Raisins - 1 teaspoon
Steps to prepare:
1. In a pan, add a teaspoon of ghee. Add cashew nuts and saut till it turns light golden. Take it on a plate. Now add raisins and fry for a minute. Now add finely chopped almonds and saute till it turns light golden in colour and add it to the same plate.
2. Now, add moong dal and rice in the same pan and saute till it turns light brown in colour. You can skip this procedure if you do not like it. Add moong dal and rice in a cooker and cook with 2 - 3 cups of water up to 3 whistles so that it turns soft. Use a medium flame to cook and once done, leave it idle till the pressure comes down naturally.
3. In a pan, add the remaining ghee and add cooked rice and moong dal. To this, add jaggery powder and allow it to dissolve by cooking on low flame. Do mix it intermittently. Once it gets dissolves and the mixture turns slightly thin in consistency, add cardamom powder and saffron. Cook for a minute or two and remove from flame.
4. Add fried cashew nuts, raisins and almonds. Allow it to cool to room temperature for few minutes. Now add milk (which is boiled and cooled off) and mix properly. Rice moong dal kheer si ready. Serve chilled. Also read about the healthy recipe - sabudana kheer.
