Healthy recipe: raw jackfruit kebab

I like recipes that are versatile. I usually cook things in batches and freeze it for later use. That's why I like dishes that can be served as a main and a side-dish. And this recipe is a winner when it comes to that. The scrumptious and tasty jackfruit cutlets are fairly easy to make and freezes well. You can serve it as a side with rice-dal, or any gravy, or use it as a patty for your burgers. It also makes for a good snack or finger food. You'll especially love this recipe if you are a non-vegetarian, because this recipe has all the condiments and flavours of a kebab and the boiled, mashed jackfruit is very similar to minced meat in texture and taste. This recipe is also a staple in my household during Ramadan.

  • Raw jackfruit, peeled and cubed -- 500 grams
  • Onion paste -- 1 cup
  • Onion, finely chopped -- 1/2 cup
  • Raw papaya paste -- 2 tbsp
  • Kebab masala -- 2 teaspoon
  • Salt, red chili powder -- as per taste
  • Garam masala, Cumin powder -- a pinch each
  • Kasuri methi -- 1 tsp.
  • Crushed red chilli -- 2 tsp.
  • Chaat masala -- 2 tsp.
  • Bread crumbs for coating the cutlets.
  • Oil for shallow frying (optional)

Method

  • Boil the jackfuit pieces untill they are very soft, good enough to be mashed.
  • Drain the jackfruit and mash it with a fork. There shouldn't be any lumps.
  • Now mix in all the other ingredients (except oil) and mix it all up. Mix it well so that it all incorported very well.
  • Divide the mixture into 18-20 equal parts. Roll each into a smooth ball and then flatten it with the palms of your hands. Tip: rub a little oil on your hand so that the mix does not stick to your hands.
  • Cover the cutlets with breadcrumbs.
  • Heat a skillet on high. Pour a little oil and let it heat up. Now shallow fry the cutlets till it browns on each side.
  • Alternatively, you can even grill these cutlets or air fry it.
