Healthy recipe: Pudina or mint rice

If you prefer rice over rotis (just like me!) and are looking for a quick yet tasty recipe, then pudina rice is a must try! This recipe is straight from my Mom’s list of recipes that can be prepared in the jiffy and fills you up at any time of the day. The fresh flavour of pudina coupled with Indian spices makes this recipe a perfect way to enjoy a lazy weekend. Moreover, if you are running late for office, then this healthy recipe can come to your rescue. Here’s how to make this super easy and healthy recipe you can relish on any summer day. 1 cup of pudina (mint leaves)

1 1/2 cups of cooked rice

1/4 cup chopped coriander leaves

2 – 3 finely chopped green chillies

Handful of cashew nuts

3 – 4 small pods of ginger

1-inch sized garlic

One finely chopped onion

2-3 teaspoons of oil/ghee

Salt (as per taste)

1 bay leaf

1/2 teaspoon jeera

4 cloves

one inch cinnamon stick

2 cardamons

Steps to prepare:

1. In a grinder, add pudina leaves, coriander leaves, ginger, garlic, green chillies and salt. Do not add water and grind till you get a smooth paste. You may like to read about health benefits of pudina.

2. In a pan, add 2- 3 teaspoons of oil/ghee. Add bay leaf, cloves, cardamon and cinnamon. Now, add jeera and once it starts to splutter, add cashew nuts. Now add onion, mix well and allow it to cook until golden brown.

3. Now add pudina paste and cook on low flame for 2- 3 minutes by stirring continuously. Add a little amount of salt and mix (As you added salt while preparing the mixture, make sure you do not add salt in excess).

4. Add rice and mix all the ingredients properly. Let it cook for 2 -3 minutes and remove from the flame. Garnish with coriander and pudina leaves. Serve hot with raita. Here are 7 ways to add mint or pudina to your diet.

You can even add vegetables like peas, carrots or beans if you like. But I prefer it having it with curd on days when I feel like having something light yet filling but not too much of spicy stuff like a biryani.
