Healthy recipe: Oil free royal Darbari dal recipe

What comes to your mind when you think of royal food? Loads of ghee, cream, butter and oil floating over a delicious preparation. But when you are trying to lose weight, even thinking about royal food is a sin. In fact, do you know that even your home cooked dals can be full of calories? Fret not as there is always a way out if you have chosen to go on the fitness path. There are a variety of healthy recipes for the fitness conscious you. The flavours from the royal recipes can be retained even with no oil or cream. So here s one such royal recipe darbari dal cooked without oil:

Ingredients:

  • cup toovar (arhar) dal, soaked for 15 minutes
  • cup rajma, soaked overnight
  • cup masoor dal, soaked for 15 minutes
  • cup red pumpkin, chopped in cubes
  • cup bottle gourd, chopped in cubes
  • cup tomatoes, finely chopped
  • tsp turmeric
  • 1 tsp coriander powder
  • tsp chilli powder
  • tsp garam masala powder
  • 1 tsp garlic paste
  • 2 tsp lemon juice
  • 2 slit green chillies
  • cup coriander, finely chopped
  • Salt to taste

Method:

  1. Drain all the dals. Put them in the pressure cooker. Add the pumpkin and bottle gourd cubes, turmeric powder and salt. Add 1 cups of water and cook for 4 whistles.
  2. Once the pressure cooker cools down, open the lid and mash the dal. If you like your dal partially coarse you can choose to leave it that way.
  3. Add the garlic paste, tomatoes, coriander powder, chilli powder, green chillies, garam masala, chopped coriander, lemon juice and salt to taste.
  4. Mix well, pour half cup of water and cook for 4-5 minutes.
  5. Stir occasionally to prevent it from sticking to the pressure cooker.
  6. Garnish with 1 tbsp coriander and serve hot with bhakris, barley or jau roti, brown rice or methi pulao.
