Healthy Recipe: Mango Chicken Salad

Bored of eating mangoes the regular way? Try this savoury mango salad.

Mango is in season, and who buys it by the dozen right? It is either by the crate or nothing. But the problem is that once ripe, mangoes start to go bad pretty quickly, and eating mangoes by itself can get a little boring. Of course, you can make your aamras, shakes and pulp, but that again is all sweet. For someone like me, who isn t much fond of sweets, eating too many mangoes get s a tad bit boring. And that s why I usually make this yummylicious and healthy, of course, mango and chicken salad. I love making this salad it is literally a burst of flavours, with sweet, tangy, spicy notes. Plus the different textures of spinach, chicken, mango, sprouted moon and almonds is very interesting. Moreover, it has all kinds of healthy ingredients like spinach, moong, chicken and definitely, the king of fruits, mango. The ingredients are simple and except for cooking the chicken, it does not really take too much of a time to prepare this salad. I have made this for my friends at various house parties and it is always a hit. The only tip I would give is since it has a lot of fresh ingredients, it is better to prepare and eat it straightaway. If stores, the mango will kind of dry out and the spinach will get soggy due to perspiration and all the lemon juice in the sprouted moong mix. If you have an excess of mangoes too and are bored of making the regular stuff, try this salad for your next meal, and after that, you can also make the delicious healthy mango ice cream!

Serves 4

Preparation time 20 minutes

Ingredients

  • Mango, peeled and cut in cubes 1 cup
  • Chicken, boiled and cut in strips 1 cup
  • Baby spinach, cleaned and washed in ice-cold water cup
  • Slivered almonds, roasted and salted cup
  • Sprouted moong 1 cup
  • Lemon juice 1 tbsp.
  • Seasoning salt, pepper, chilli flakes
  • Cabbage, shredded cup
  • Olive oil for dressing

Method

  • Heat a grilling pan on high heat and drizzle a little oil over it. Take the chicken strips and toast it on the pan, seasoning it with a pinch of salt and pepper. Let it cool.
  • In your salad bowl, line the baby spinach on the bottom.
  • In a bowl, mix your sprouted moong, shredded cabbage and all the dressing and lemon juice. Give it a good mix. Layer this on top of the spinach.
  • Next, layer the chicken strips. You can place the chicken strips horizontally on top of each other to make it look more beautiful.
  • The last layer will be your mango cubes, paired with almonds and a little drizzle of olive oil.
  • Enjoy this crunchy and delicious salad straightaway. It makes for a yummy side for most continental recipes or can be eaten as a meal too. If you want to add a little more texture to the salad you can add a spoonful of hung curd and some croutons to the mix.
