This healthy combination of curd plus vegetables is what makes a vegetable raita the best accompaniment to be had with a Daliya paneer pulao.
Chopped vegetables (Cucumber, beetroot, onion and tomato)- 1 cup
Curd- 1 Katori
Mint leaves ( finely chopped )- 1 tbsp
Roasted ground cumin - tsp
Black pepper- 1/4th tsp
Red chillies powder- 1/4th tsp
Fresh coriander leaves- to garnish
Chat masala- 1/4th tsp (optional)
Green chilly (finely chopped)- (optional)
Salt- as per taste
Water- 1 cup
Method:
Peel the cucumber and chop it into small pieces (cubes).
Take a medium-sized bowl and add curd to it. Mash it with a blender until it gets smooth. Add water and remaining ingredients except for cucumber, beetroot, onion, tomato and again mix them well.
Now add cucumber, beetroot, onion, tomato to it and mix it again.
Refrigerate vegetable raita for 1/2 hour before serving, garnish vegetable raita with finely chopped coriander leaves and serve chilled. Here are 5 types of raitas you must eat during summer.
