As a little kid, nothing spelled vacation better than some crunchy mathri. No matter whether it was the summer vacation, Diwali holidays or the Christmas vacation, my mom always had a batch of mathris ready for us siblings to enjoy. The elders would love their plate of mathris with their evening chai. You should also try the yummy cucumber cake.

As I grew up, I got very health conscious. Low-fat food, skimmed milk, low-calorie diet, but my love for mathri would always make my diet plans go for a toss. Until I came up with this gem of a recipe. With healthy ingredients, this low-fat recipe tastes the same and evokes in me that sense of holiday and laughter that I always associate with mathri. Enjoy the recipe and share your experience in the comments below. You can get many more healthy recipes here.
