The second half of the year is choc-a-bloc with festivals like Janmashtami, Ganesh Chaturthi, Eid, Dussehra and Diwali. And if there is something that adds more enthusiasm to the festive spirit apart from shopping, it is the beautifully laid out festive food. And while they are just yum, most of them are very high in calories. Try this variety of your favourite sheera and you will no longer associate the word mithai with calorie-rich ghee-laden sweets.
This pineapple sheera is not only low in calories but is extremely nutritious. Jaggery is an excellent source of iron and pineapple is a rich source of vitamin C.
A few saffron strandes (kesar) dissolved in 2 tablespoons low-fat milk
tsp cardamom (elaichi) powder
Method:
Combine the pineapple puree and 2 tablespoons of jaggery in a pan. Mix well and cook on a medium flame for 3-4 minutes while stirring continuously. Keep aside.
Heat the ghee in a deep kadhai or pan, add the semolina and mix well. Saute on a medium flame for 5 to 7 minutes till it is light pink in colour while stirring continuously.
Add the remaining jaggery, mix well and cook on a medium flame for 1 to 2 minutes till the mixture is dry.
Add the prepared pineapple mixture, mix well and cook on a low flame for 2-3 minutes while stirring continuously.
Add the saffron-milk mixture and cardamom powder. Mix well and cook for 1 to 2 minutes while stirring continuously.
Now sprinkle a few strands of saffron in a glass bowl, add the prepared sheera and mould it on a serving plate.
