If you are a Maharashtrian, you might be well aware of kulith recipes such as a mouth-watering usal and pitla. If you are a South Indian then you might have eaten it with rasam and idlis. And if you are from Himachal, then kulith khichdi is what you might associate this healthy pulse with. Packed with proteins, fibre and antioxidants, one serving (25 gms) of kulith provide 6.25 gms of protein. It is not only economical but also a healthier alternative to the currently expensive toor dal and moong dal. Not just this, this healthy pulse is rich in minerals such as calcium, iron and zinc. Moreover, it gives you satiety post meal, helps in maintaining hormonal balance and also prevents lifestyle diseases. And hence, to reap the benefits of kulith, here is a simple and tasty kulith porridge recipe (Mandga in Marathi) from celebrity nutritionist Rujuta Diwekar.

Ingredients:
2 small bowls of kulith (horse gram)
1 small bowl of rice
A small piece of jaggery/ 1 cup of sugarcane juice
1 cup of milk
1 cup of water
Salt to taste
A pinch of elaichi (cardamom) powder
Few strands of kesar (saffron) for colour and taste
Steps to prepare:
Step 1: Dry roast 2 cups of kulith and a cup of rice separately. (Remember that the ratio of kulith and rice has to be maintained to 2:1). Remove the husk from the pulse and grind it with rice to make a coarse powder just like rava. Keep the powder aside.
Step 2: Take a pan and bring 1 of cup water to boil. As the water starts boiling, add a teaspoon of salt and a small piece of jaggery. Mix the ingredients. Now, add a cup of milk and mix intermittently. You can replace jaggery with sugarcane juice if you need.
Step 3: As the milk begins to boil, start adding the ground rava in the pan slowly. Keep stirring the ingredients in the pan as you add the rava. Allow it to boil with milk for 5 minutes. Now, add elaichi powder and kesar for flavours and remove from flame. Serve cold.
You can drink this as a beverage for breakfast as it not only healthy and tasty but also keeps you full for a long time.
