If you are anything like me, you spend the weeks leading upto Diwali browsing through mithai recipes, jotting down ingredients and making sure you have everything to make your favourite sweets. But what you forget is the months of careful eating and weight watching. Diwali is no reason to gain back all the weight you so labouriously lost. But Diwali isn't the same without sweets, right? So here's what you should do -- make healthy mithais and desserts! There are so many healthy mithai recipes like date and nut mitha or the date and walnut laddoo that are rich, decadent and will add all the sweetness you need during this festive season. Another must-try recipe is this kesar malai laddoo, or kesar malai pinni. The name itself sounds so yumm that you know for sure that the recipe is definitely a winner!
Put the malai in a sauce pan and stir fry for 2-3 minutes
When the malai has melted, grate and add the paneer to it and continue to stir fry
After the mix gets thick, mix in the saffron in with 1 tbsp milk and then add it to the mixture
Stir fry continuously until it becomes thick
Take out the mixture and let it cool and the jaggery a little by little
Take a little amount and shape it in round balls like ladoos
Garnish with chopped pistachios
