If you love potato, you surely love yam too. It has the same texture as potato, but has a more earthy and rich flavour. The health benefits of yam makes it a must-eat for all the fitness freaks. A lot of kids love french fries, but if you are worried about all the calories and cholestrol it packs in, then you should try this healthy yam fries. I tried it and it is now my favourite!

In a pan heat oil. Add mustard seeds, curry leaves, boiled onion and tomato puree, turmeric powder, red chilli powder; saute until it starts leaving oil from the wedges. Add boiled yam, salt, lemon juice and mix well.
In another pan heat oil. Add cumin seeds, green peas, ginger garlic paste, salt, red chilli powder, chopped coriander and mash the mixture.
On a baking dish make layers of yam mixture and green peas mixture.
Top it up with grated tofu.
Keep the bake dish in the oven at 170 to 180 degree Celsius for 10 minutes. Once baked remove the bake dish from the oven.
Garnish with sweet potato chips. Apply salt to the red amaranth leaves and place it on the bake dish.
