Healthy recipe -- Foxnut kheer

When it comes to healthy snacks, Foxnut, or makhana, is definitely a winner. Low in calories and light on the stomach, Foxnut is easily available. You can either eat it roasted, or make this yummy kheer that will sure be a winner at any dinner party.

Try this quick, healthy recipe that has the goodness of jaggery and assorted dry fruits. Serve this as a party dessert and people will surely come asking for the recipe!

Ingredients

  • Foxnut/Makhana/Puffed lotus seeds - 1 cup
  • Low fat milk 500 ml
  • Milk powder 1 tbsp
  • Jaggery (powdered or grated) - cup
  • Cashewnuts, almonds, pista, raisins 1 tsp each
  • Cardamom powder 1 tsp
  • Ghee - 1 tbsp

Method

  • Heat ghee in a pan and roast the foxnuts till crisp and lightly browned.
  • Crush cup and cut the remaining in half.
  • Add the milk powder to milk and boil it.
  • Add foxnuts, stir well and simmer for 15 minutes on medium flame with occasional stirring.
  • Add cardamom powder.
  • Let the mixture thicken a little.
  • Switch off the gas and mix the jaggery.
  • Heat on low flame for two to three minutes with constant stirring.
  • Add the cashewnuts, almond, pista and raisins and cover.
  • Serve chilled.
