Healthy recipe: Curried apple pumpkin soup by Chef Ranveer Brar

We've heard that an apple a day keeps the doctor away and if you don't like the fruit, you can still reap in its benefits with this soup. Not just apple, it has the goodness of pumpkin too. And don't worry, the soup isn't bland, it has several spices to suit the Indian palate which further increase its health quotient. Read these health benefits of spices.

  • Serves 2
  • Cooking time: 10 minutes
  • Preparation time: 10 minutes
  • You will need: Pan, spatula, blender, sieve, mixing bowl, ring mould

Ingredients:

  • 1 tsp olive oil
  • 1 tsp chopped garlic
  • 1 tsp chopped ginger
  • 1 tbsp chopped onion
  • 1 tsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt to taste
  • Crushed black pepper to taste
  • cup chopped apple
  • 1 cup chopped pumpkin
  • 1-2 tbsp oatmeal

For garnish

  • 2 tbsp chopped celery
  • Parmesan cheese as per taste
  • Crushed black pepper to taste
  • Gorgonzola cheese to taste
  • Few drops of honey
  • A pinch of degi mirch
  • Garlic bread

Method:

  • On a pan heat olive oil, add chopped garlic, chopped ginger, chopped onion, curry powder, turmeric powder, coriander powder, salt, crushed black pepper, chopped apple, chopped pumpkin, water and cover the pan and cook for 5 to 7 minutes.
  • Remove the pan lid and keep aside some mixture for the garnish.
  • Add water to the pan mixture and blend it. Then sieve it further.
  • Boil the sieved soup and add oatmeal to it and let it cook further.
  • Add chopped celery and parmesan cheese.
  • Remove the soup in a bowl.
  • Add gorgonzola cheese at the centre.
  • Serve the soup with garlic bread.
  • Sprinkle degi mirch and drizzle few drops of honey on cheese.
  • Serve immediately.
