Healthy recipe: Carrot rice for your tiffin box

Try this quick and tasty carrot rice recipe for lunch when you are pressed for time and don't know what to make!

When you run out of time and don t have more than an hour to prepare your lunch and pack your tiffin box, this recipe can come to your rescue. Simple and quick to prepare, carrot rice is not only healthy and tasty but fills your stomach well. So the next time your Mom is away from home or you are extremely hungry, try this instant and appetising rice recipe.

Ingredients:

  • A bowl of cooked rice
  • 1 cup grated carrot
  • teaspoon chana dal
  • teaspoon urad dal
  • teaspoon rai or mustard seeds
  • teaspoon jeera or cumin seeds
  • teaspoon turmeric or haldi
  • 3-4 curry leaves
  • Chopped coriander leaves for garnishing
  • Salt to taste
  • 1-2 teaspoons of cooking oil

Method:

Heat a pan on medium flame. Add 1- 2 teaspoons of cooking oil in the pan and heat it for a minute or two.

Add, chana dal, urad dal, mustard seeds and jeera or cumin seeds to the pan. Once, these ingredients start sputtering, add curry leaves.

After a few seconds, add the cup of grated carrot to the pan and allow it to cook for 5 minutes on a low flame. Check whether the carrots are cooked and not raw.

Now add turmeric and mix it properly. Also, add salt to taste and mix. Add the rice and mix it with a saute spoon.

Allow it to cook for 3 minutes before you turn off the stove.

Add coriander leaves for garnishing before you serve.
