Healthy recipe -- Apple cinnamon muffins

Not only are these muffins healthy and delicious, but will also leave your house smelling amazing.

Whenever my mom bakes these muffins, there's only one thing I feel -- that every house should smell like this. The sweet aroma of apples mixed with the woody fragrance of cinnamon is simply heavenly. Also, the lovely golden colour, thanks to the brown sugar, is a sight to behold. Did you know apples also keep your heart healthy!

We always have these healthy muffins during winter, and it is one recipe that we also get the kids in the house to help with. The ingredients are few and the method very easy-peasy, and the whole family has a great time making batch after batch of these yummy muffins. Ingredients

  • Apples, peeled and finely chopped - 2 medium sized
  • Honey - 3 tablespoons
  • Low-fat oil - 4 tablespoons
  • Wholewheat flour - 1 cup
  • Baking powder- 1 teaspoon
  • Skimmed milk - 1/2 cup
  • Brown sugar - 1 tablespoon
  • Cinnamon powder - 1/2 tablespoon

Method

  • Preheat your oven to 180 degrees celsius. Grease a muffin tray and keep aside.
  • Mix apple, flour, baking powder, oil and honey till well incorporated.
  • Add milk and mix properly. You can adjust the consistency of the batter by adding more milk, if required.
  • In a bowl, mix brown sugar and cinnamon.
  • Using a spoon or an ice-cream scoop, divide the batter in the moulds in the muffin tray.
  • Sprinkle the cinnamon-brown sugar mix on top of each muffin.
  • Pop the tray in the oven and bake for 12 minutes.
  • Poke a toothpick through one of the muffins to check whether they have cooked through.
  • Let the muffins cool before you unmould.
