Healthy recipe - 10 minute oats and rava idli

While oats is an amazing grain with a lot of health benefits, I find eating oats a little boring. I can eat oats khichdi or porridge for sometime, but it gets boring and I don't enjoy the sticky taste for too long. That is why I try to include oats in recipes where the taste is not particularly discernible, and I also get to enjoy its benefits. Since I love idli (who doesn't!) I thought of trying to make idlis from oats, which I ground to a powder and mixed in some yogurt and water. While the idlis looked beautiful and fluffy while steaming, once I unmoulded it, it became flat and sticky. Not very palatable. Then came the eureka moment. A few days ago my mom made the most awesome, scrumptious and mouth-watering rava idlis that were to die-for. And I had this amazing idea of incorporating oats powder into the rava idli batter and have the best of both worlds! And it worked and how! Since it was an experiment, I only made half the quantity of the recipe mentioned below, but it was too less for my family who loved the idlis and literally licked the plate clean. The idlis were gone in minutes and I knew I had hit the jackpot. This recipe is quick, simple, requires few easily available ingredients, and is definitely healthy. This is going to be my go-to snack/ meal option for a long time. With a recipe this easy, you can't go wrong.

Ingredients

  • Oats, ground to a powder - 1 cup
  • Rava (fine semolina) - 1 cup
  • Yogurt - 1 and a 1/2 cup
  • Salt - as per taste
  • Water - as required
  • Baking soda - 1 teaspoon

You will also need an Idli steamer

Method

  • Pour some water in your idli steamer and start it on a stove-top to start boiling.
  • You can either roast the oats for 2-3 minutes and grind it or use your regular quick oats to make oatmeal.
  • Mix thee oats, rava, salt and yogurt. Add yogurt 1 tablespoon at a time and keep on whisking it. Once all the yogurt is added, check the consistency and add water accordingly. The consistency should be pancake batter like, spreadable but not runny.
  • Once the water begins to boil, lightly brush oil on all the idli moulds.
  • Add baking soda to the batter and using a ladle, pour the batter in the moulds.
  • Pop the moulds in the steamer and cover it to let it cook.
  • After 5 minutes, check if the idlis have cooked. Cooked idlis will have risen and an inserted toothpick will come out clean.
  • Once cooked, let it cool before unmoulding.
  • Serve it with coconut-groundnut chutney and sambar.
