Healthy Ramadan Recipe: Sweet potato barfi

Sweet potato is much healthier than potato as it is a complex carb and does not spike up your blood sugar levels instantly. Try this barfi made of this ingredient this Ramzan. Health benefits of sweet potato:

  • Has potassium that helps regulate heartbeat and nerve signals.

  • Rich in vitamin D, important for healthy bones, heart, nerves, skin, teeth and supports thyroid gland.

  • Sweet potato - 400g
  • Desiccated coconut - 2 tbsp
  • Condensed milk 5 to 6 tbsp
  • Ghee - 1 tbsp
  • Elaichi powder - 1 tsp
  • Almonds - 2 tbsp

Method

  • Boil, peel and mash sweet potatoes.
  • Chop the almonds.
  • Heat ghee in a non-stick pan.
  • Add the mashed sweet potatoes and roast it well.
  • Add condensed milk and mix well on a slow flame.
  • Sprinkle coconut, stir well and cook till the mixture leaves the sides of the pan.
  • Remove from heat.
  • Add elaichi powder.
  • Remove it in a microwave safe dish, flatten it and microwave on low for 30 minutes.
  • Garnish with chopped almonds.
  • Cool and serve.
