Healthy Ramadan Recipe: Mango and Wheat Kheer for iftaar

After you have fasted all day long in Ramadan, you need something satisfying and filling during iftaar to help you get going for the whole of next day. With mangoes in season, this mango and wheat kheer is the perfect iftaar recipe. Mango gives this kheer a very fresh and rich taste, while wheat is very filling and nutritious. Together these two ingredients make for a very healthy and delicious recipe!

Ingredients

  • Butter : 2 tbsp
  • Overnight Soaked and Boiled Wheat : 1 cup
  • Grated Coconut : cup
Serves2 persons
Cooking Time30-40 mins
Preparation Time20 mins
Equipment NeededPan, Spatula, Mixie.
  • Milk : 1 cup
  • Condensed milk : 2 - 3 tbsp
  • Mango Pulp : 3 - 4 tbsp

For Garnish

  • Silver Leaf
  • Rose Petals : 3 - 4 nos.

For Strawberry Slush

  • Strawberries : 8 10 nos.
  • Starawberry Syrup : 4 tsp

Method

  • Melt butter on a pan. Add Overnight soaked and boiled wheat, grated coconut, milk and mix well.
  • Cook for 20 to 25 minutes.
  • After the kheer becomes thick add condensed milk, mango pulp, soaked poppy seeds and let it cook.
  • Remove this kheer in a bowl.
  • Garnish with silver leaf and rose petals.
  • To prepare strawberry slush in a mixie add strawberries, ice, strawberry syrup and blend it.
  • Remove the prepared strawberry slush in a glass and serve with Mango and Wheat Kheer.
