Peanuts are rich in monosaturated fats, vitamin B3 and when consumed by pregnant women, reduce the risk of allergic diseases in newborns. Spinach is a good source of iron and folate. It boosts immunity and nutrients in spinach improve the blood flow. Hence, the combination of peanuts and spinach works perfectly as a healthy pregnancy recipe. This recipe is a great way to add these nutrients to your diet during pregnancy. The groundnut tikkis are rich in vitamin B3 too. They are scrumptious and will help you beat your cravings for dhaba style tikkis at home. Here s the quick recipe for healthy groundnut tikkis:

Ingredients:

  • cup peanuts, roasted and powdered
  • cup besan
  • cup spinach, chopped
  • 5 tbsp whole wheat flour
  • 1 tsp green chillies, finely chopped
  • 1 tbsp lemon juice
  • 1 tsp warm oil for kneading
  • 2 tsp oil for cooking
  • Salt to taste

Method:

  1. Combine all the ingredients, except the oil and mix well. Add a little water to knead into a soft dough. The dough should be soft enough to roll tikkis from it.
  2. Add 1 tsp oil to the dough and knead again for 1-2 minutes.
  3. Make 8 tikkis from the dough mix. You can roll round balls and flatten them to get desired shape. If you are planning to serve these at a party, you can make coin sized tikkis.
  4. Heat a nonstick pan and brush it with tsp oil. Place the tikkis and cook them till they turn golden brown. The crust can be slightly crisp.
  5. Keep brushing few drops of oil while turning the tikkis to cook them evenly.
  6. Serve them with healthy green chutney or yoghurt dip. You can also try this beetroot dip or achari dip.
