Healthy Mahashivratri vrat recipe: Sweet potato kheer

Fasting for Mahashivratri? Why go for the usual sabudana kheer or just fruits when you can make something extraordinary and delicious instead! Make yourself and your family this delicious sweet potato kheer. It is healthy and a rich source of Vitamin C and 100 grams contain eighty calories. You don't have to go on a purchase spree for ingredients to make this, all the ingredients are easily available and you might just find some in your kitchen. It will take you 16-20 minutes to prepare and approximately 30 minutes to cook this kheer. Check out this low-calorie carrot halwa recipe by Tarla Dalal here.

Ingredients:

  • 3 medium sized sweet potatoes, grated and soaked
  • 5 cups of milk
  • 1 tbsp ghee or clarified butter
  • 1 tbsp rose petals
  • 1/2 tsp green cardamom powder
  • 2 tbsp rose syrup
  • Sugar to taste

Method:

  • Heat the ghee in a pan
  • Add sweet potatoes and saut for two to three minutes
  • Add some milk. The sweet potatoes get cooked as the milk thickens
  • Add half of the rose petals and cardamom powder
  • Stir and cook till the mixture thickens slightly
  • Add sugar, while stirring, and cook till you get the desired consistency
  • Switch off the flame set it aside to cool and then, keep it in the refrigerator to chill
  • After taking the kheer out of the fridge, pour it into serving bowls, add some rose syrup and sprinkle the remaining rose petals before serving
