I love simple, comfort food. If you have to wait in the kitchen for more than 30 minutes to just prepare one main course dish, the recipe is a slight put-off. I prefer cooking my veggies in the pressure cooker so that the oil used is minimal and it saves time too. Here s a recipe passed on to me by my mother. It s a blend of Gujarati and Rajasthani cuisine and it has no sugar. Cluster beans are used in this recipe which improve bone health, keep your heart healthy and calm the brain too. So even those in the family who dislike this option for lunch are going to start asking more of it. Here s the recipe for cluster beans with gram flour dumplings or gavar gatte ki sabzi:

Ingredients:

  • 2 cups gavar phalli, chopped in medium sized pieces
  • 1 cup besan or gram flour
  • 1 tbsp. turmeric powder
  • 1 tbsp. chili powder
  • 1 tbsp. coriander powder
  • 1 tsp garam masala
  • 1 tsp ajwain or carom seeds
  • 1 tsp oil
  • 1 tsp mustard
  • 1 tsp cumin seeds
  • Salt to taste
  • 1 cup water

  1. Chop and clean the beans properly.
  2. Mix besan with halt tbsp. each of turmeric, chili powder, garam masala, coriander powder and salt to taste. Add the carom seeds. Add 3-4 tbsp of water to make a thick paste. The consistency must be like idli batter.
  3. In a small pressure cooker, heat the oil for tempering. Add the mustard and cumin seeds and allow them to crackle.
  4. Now add the turmeric powder and the beans. Mix well. Add the other masalas and salt. Add the one and half cup of water and bring it to a boil.
  5. Now drop pea-sized besan dumplings slowly in the boiling curry. Once done, cover the pressure cooker and cook for 2 whistles.
  6. Serve hot with phulkas.
