Healthy lunch recipe: Dudhi fennel sabzi recipe

Bottle gourd or lauki may not be a hot favourite when it comes to vegetables but it certainly tastes good if prepared the right way. The numerous health benefits are one of the prime reasons it should be a part of your regular diet. It prevents urinary tract infections, aids digestion and is low calorie. It is also a good source of zinc, magnesium, iron and potassium. Fennel seeds add a pickle-like taste to this recipe. Fennel seeds also beat water retention, prevent anaemia, and regulate your blood pressure. Anuradha Sawhney, vegan recipes exert and author of The Vegan Kitchen: Bollywood Style! shares with us an interesting recipe of fennel seeds and lauki.

Ingredients:

  • 250 grams lauki
  • 3 medium tomatoes
  • 2 to 3 cloves of garlic
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp haldi
  • 1 green chilli chopped fine
  • Salt to taste
  • Red Chilli powder to taste
  • Chopped green coriander to garnish

  1. Wash the tomatoes and chop them fine and keep aside.
  2. Crush the garlic cloves.
  3. Wash the lauki well and without peeling it, chop it into bite sized pieces.
  4. Place them immediately in water so they do not turn black.
  5. Heat a non-stick pan and saut the cumin seeds till they are cooked.
  6. Now add the tomatoes, fennel and the garlic, cover and cook till the tomatoes have softened.
  7. Add all the dry masalas, the lauki and the green chilli, cover and cook till the lauki has softened. Garnish with coriander leaves and serve hot.
