Healthy low-cal chunky tomato pasta

Pasta is usually not recommended for diabetics because it is usually calorie-laden and creamy. Here's a low calorie variety of this delicacy which makes use of lots of tomatoes, vegetables and just a dash of low fat cream to satisfy your cravings.

Serves 4

Ingredients

Farfalle (bow-shaped pasta), cooked 2 cups

Tomatoes, blanched 6 medium sized

Garlic (lehsun), finely chopped 3 cloves

Celery, finely chopped 1 tbsp

Fresh basil, chopped 1 tsp

Low fat cream1 tbsp

Sugar1 tsp

Broccoli florets, blanched1/2 cup

Olive oil 2 tsp

Salt to taste

Freshly ground black pepper (kalimirch) powder to taste

Method

  1. Cut the blanched tomatoes into halves and deseed.
  2. Cut each half into 3 chunks lengthwise and keep aside.
  3. Heat the oil in a non-stick pan, add the garlic and celery and fry for a few seconds.
  4. Add the tomato chunks, basil, salt and pepper and mix well.
  5. Add the cream and sugar and mix well. Remove from the flame and keep aside.
  6. Just before serving, add the pasta and broccoli and toss well.
  7. Serve immediately.
