Healthy lemon coriander soup recipe from scratch!

A big bowl of this soup is enough to keep you full for the evening.

A piping hot soup is so comforting on a winter evening. And if this soup fills your tummy and doesn t demand a complete meal in the evening, it s a bonus. Here s why having a soup is a healthy idea too. I love lemon coriander soup because it is packed with so much flavour of spices, vegetables and a hint of fresh coriander and lemon to tickle your taste buds. Buying ready-made vegetable stock or using cubes for making it steals the nutrient value of such a healthy soup. So I decided to make it from the scratch. Here s a quick recipe for it:


  • 1 cup finely chopped vegetables (carrots, capsicum, cabbage, beans)
  • 3 cups water
  • 3-4 peppercorns
  • 1 bay leaf
  • 5-6 tbsp lemon juice
  • 3 tbsp chopped coriander
  • 3 tbsp spring onions for garnish
  • Salt and pepper to taste
  • 1 tsp olive oil

  1. Heat oil in a saucepan. Add the mixed vegetables and saut for 2 minutes.
  2. Add water, salt, peppercorns and bay leaf and boil for 15 minutes.
  3. Now add the corn flour mixture and salt.
  4. Once it thickens, add the chopped coriander, lemon juice, spring onions and pepper powder.
  5. Boil for few minutes. At this stage, you can also add lemon wedges or rind for the perfect lemon taste.
  6. Serve hot with breadsticks or you top it with cornflakes.

P.S. Vegetables like mushroom, zucchini, and broccoli can also be added. I didn t have them so managed with my stock.

I did not add any cornflour as I don t prefer very thick soups plus it is not very healthy. You can add it in case you are not a weight loss or low carbohydrate diet regime. You can also try these 5 healthy soups to beat winter blues.
