Healthy Indian recipe: Beetroot salad

This one is a family favourite and has been passed down from generations. The salad is refreshing, tasty and colourful and goes well with all cuisines. Beetroots have a lovely red colour to them and are loaded with benefits for diabetics, pregnant women, anaemic and hypertensive patients too. It also improves sexual stamina. This festival season add the red colour to your plate with this quick and easy recipe of the beetroot salad.

  • 2 beetroots, grated
  • 2 tbsp coriander, finely chopped
  • 1 tomato, diced in small pieces
  • tsp sugar
  • tsp chilli powder
  • tsp coriander powder
  • tsp cumin powder
  • A pinch of asafoetida or hing
  • lime
  • Salt to taste

Method

  • Grate the beetroots in a deep bowl.
  • Add the coriander, tomato and sugar and mix well.
  • Mix the remaining ingredients and mix it with your fingers so that all the ingredients blend well.
  • Squeeze lime juice and all the salad to sit for 10-15 minutes before serving.
  • The ingredients will soften the beetroot a little and add to the flavour.
  • Serve with main course or enjoy it with pita bread or just as is with a bowl of soup for dinner.

Tips:

You can add one tablespoon of toasted sesame seeds to this salad right before serving it for a nutty flavour. Read more about the benefits of sesame seeds here.

You can replace the beetroot with finely shredded cabbage or grated carrots and follow the same recipe for variations of the salad.
