Healthy Holi recipe: Shahi Poli

Though cooked using very little ghee it tastes as scrumptious as the traditional puranpoli.

Shahi Poli Though cooked using very little ghee it tastes as scrumptious as the traditional puranpoli. I have added low fat mava to give it a shahi touch.

Ingredients

  • For The Dough
  • 1 cup whole wheat flour (gehun ka atta)
  • 1/4 tsp oil for kneading

For The Filling

  • 3 1/2 tbsp semolina (rava)
  • 5 1/2 tbsp low fat mava (khoya)
  • 2 1/2 tsp sugar substitute
  • 1/2 tsp cardamom (elaichi) powder
  • 1/2 tsp ghee

Other Ingredients

  • Whole Wheat flour (gehun ka atta) for rolling
  • 1 1/4 tsp ghee for cooking

Method

For the dough

  1. Combine the flour and oil and knead into a soft dough using water.
  2. Divide into 6 equal portions and keep aside.

For the filing

  1. Heat the ghee in a non-stick pan, add the semolina and saut on a slow flame till it turns light pink in colour.
  2. Add the khoya and sugar substitute, mix well and cook for another minute.
  3. Add the cardamom powder and mix well.
  4. Remove from the flame and keep aside to cool.

How to proceed

  1. Roll out one portion of the dough into a 75 mm. (3") diameter circle.
  2. Place 1 tbsp of the filling and fold the edges of the dough over the filling.
  3. Pinch the edges together to seal the filling in.
  4. Flatten the dough and roll again into a 125 mm. (5") diameter circle.
  5. Cook on a non stick pan using tsp ghee over a medium flame till golden brown spots appear on both sides.
  6. Repeat for the remaining dough and filling to make 5 more puranpolis.
  7. Serve hot.
