Healthy Gujarati recipe: Soya Methi Theplas

soya methi theplasTheplas are extremely popular among Gujaratis. This tasty preparation however has been modified a bit with the addition of soya flour. The methi, which gives the dish its flavour has many health benefits. A little bit of fresh curd gives the theplas a softness which makes people ask for more and more of it!

Makes 15 theplas

Ingredients

1/2 cup whole wheat flour (gehun ka atta)
1/4 cup soya flour
1/4 cup finely chopped fenugreek (methi)leaves
2 tbsp fresh curds (dahi)
1/2 tsp turmeric powder (haldi)
3/4 tsp chilli powder
salt to taste
1/4 tsp soya oil for kneading
whole wheat flour (gehun ka atta) for rolling
2 tsp soya oil for cooking

Method

  1. Combine all the ingredients in a bowl and knead into a soft dough using enough water. Keep aside for 10 minutes under a wet muslin cloth.
  2. Knead again using soya oil till smooth and divide the dough into 15 equal portions.
  3. Roll out one portion of the dough into a 125 mm. (5") diameter thin circle using a liitle flour for rolling.
  4. Cook the thepla on a tava (griddle) over a medium flame, using soya oil, till both sides are golden brown.
  5. Repeat with remaining dough to make 14 more theplas.
  6. Serve hot.
