Healthy Gudi Padwa recipe: Jowar ki tikki

This recipe is a healthier version of the traditional tikki.

Gudi Padwa is on March 31.

This dish is made by mixing jowar with mashed potatoes and spices to make small tikkis. They are then shallow fried and served with green chutney. Jowar is rich in protein, fibre and will keep your hunger pangs at bay. This dish can be eaten as an evening snack. Here is the recipe.

Ingredients

cup sorghum (jowar), soaked and boiled with salt

2-3 tbsps table spread with omega-3

Oil to shallow fry

tsp asafoetida

1 tbsp finely chopped ginger

3-4 green chillies, finely chopped

tsp red chilli powder

tsp black salt

tsp chaat masala + to sprinkle

Salt to taste

3-4 medium potatoes, boiled, peeled and mashed

1 tbsp cornstarch

A few onion rings for garnishing

A few red capsicum strips for garnishing

A few green capsicum strips for garnishing

Green chutney to serve

Method

  1. Heat 2-3 tbsps table spread with omega-3 in a non stick pan. Add asafoetida, ginger, green chillies and paunk (jowar) and mix well.
  2. Add red chilli powder, black salt, chaat masala and mix well. Transfer this mixture into a bowl. Add salt and mix. Set aside to cool.
  3. Mash potatoes and put into another bowl, add cornstarch and salt and mix well.
  4. Heat sufficient oil in another non stick pan.
  5. Divide potato mixture into equal portions and roll into balls. Shape each ball into a katori, fill it with paunk mixture, gather the edges and seal and shape it like a tikki.
  6. Place tikkis in the pan and shallow-fry, turning sides, till golden and crisp on both sides. Drain on absorbent paper. Sprinkle little chaat masala.

Garnish with onion rings, a few red capsicum strips and a few green capsicum strips and serve hot with green chutney.
