Healthy Gudi Padwa recipe: Apricot shrikhand

Apricot Shrikhand

This dish is for people who have a sweet tooth. It is a lovely combination of golden apricots and yoghurt, garnished with pistachios. Shrikhand is a favourite on Gudi Padwa but can add a lot of calories in one go. Make this healthy version using artificial sweetener which will keep you away from the ill-effects of sugar. The apricots and curd add their own healthy goodness, making it a wonderful festival treat for all. Here is the recipe.

Ingredients

Golden apricots - 15-20

Artificial sweetener - 6 teaspoons

Hung yoghurt - 2 cups

Pistachios, sliced - 10-15

Method

  1. Slice the golden apricots. Take them in a pan, add one and half cups of water and half quantity of specified artificial sweetener and mix. Cook on low heat for fifteen to twenty minutes.
  2. Take hung yoghurt in another bowl. Add the remaining sweetener and mix. Squeeze this mixture through a muslin cloth.
  3. Put the shrikhand in a stemmed glass. Remove the stewed apricots from heat and put them on top of the shrikhand.
  4. Garnish with pistachios and serve.
