Healthy dinner recipe: Paneer and egg khichdi

A protein-rich recipe using leftovers when you are too bored to cook.

You ll be surprised with what you can create with leftovers from the refrigerator. For days when you are bored to cook from scratch but still want to eat something comforting and tasty, this recipe of paneer and egg khichdi is just ideal. Here s why khichdi is more than just comfort food. This recipe can be made from leftover dal, rice and all you need is paneer and egg to add to it. The recipe is quick and easy for bachelors or single working men or women who have a lot of leftovers in the fridge and want a quick healthy dinner fix.

Ingredients:

  • 1 cup rice, leftover or cooked
  • 1 cup dal, leftover or boiled
  • 2 eggs
  • cup paneer, cut in cubes
  • 2 tbsp coriander, chopped
  • 1 tsp cumin seeds or jeera
  • 1/2 tsp red chilli powder
  • 1 tsp garam masala
  • 2 tsp ghee, preferably homemade
  • 1 green chilli, slit
  • piece cinnamon (dalchini)
  • Salt to taste

Method:

1 In a pan, heat the ghee. Add cumin seeds and cinnamon. Add ginger garlic paste and saute for a minute.

2 Add rice to the tempering and stir well for 2 minutes. Meanwhile soft boil 1 egg.

3 Add the dal and chillli powder and little salt and mix. Add half cup water and cook.

4 Beat one egg and add the egg drop to the khichdi while it still has some water. Mix well and cook for 1-2 minutes. Do not overcook the egg.

5 Turn off the gas and add the chopped coriander and garam masala. Give it a nice mix.

6 Saute or stir-fry some paneer with salt in a non-stick pan with little ghee or olive oil till golden brown.

7 For serving, place the khichdi in a bowl or plate and top it with paneer cubes and boiled egg cubes.

8 Serve hot.
