Healthy dinner recipe: Honey-smeared chicken

Since it is low on carbs, you can have it for dinner. Add a few raw veggies on the side and you have your healthy meal of the day. Nutritionist Priya Kathpal shares the recipe of honey-smeared chicken.

Ingredients

  • 2 tablespoon extra virgin olive oil
  • 1 small red onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 4 tablespoon honey
  • 1/2 teaspoon chilli powder
  • 1 teaspoon lemon juice
  • 4 skinless, boneless chicken breasts
  • Salt to taste
  • 2 yellow bell peppers cored, cut into thick rings

Using a saucepan, heat 1 tablespoon oil on medium heat. Add onion and garlic and cook until translucent and start to turn brown (should take around 6-8 minutes). Now add honey, chilli powder and simmer for a minute. Switch off the flame, add lemon juice and keep it aside.

Preheat a large grill pan to medium-high. Smear the chicken with the remaining olive oil and season with salt. Grill until well-cooked (should take abt 10-12 minutes). Flip and cook the other side. Transfer to a plate and pour the honey glaze all over. Cover with foil and let it rest for a few minutes.

Meanwhile, grill the bell pepper until well-marked on one side, then turn it over and cook for another 2 minutes. Serve with the chicken.

You can add other grilled veggies too. Add a little hot pepper sauce on side to in case you find it too sweet!
