I made my first molten lava cake about 10 years ago and knew instantly that it is going to be a recipe that I will make over and over again. Little did I know that it will be something I make two, even three times, in a week alone! My family is so much in love with this recipe that they demand it almost every other night after dinner. And I am not complaining; the recipe requires very few ingredients, and now I don't even need to measure the ingredients. I simply eyeball the entire thing and can make the batter in 5 minutes. Since there is no sugar and maida in the recipe, I can enjoy this guilt-free. Moreover, dark chocolate is actually healthy! A lot of people struggle with making a good molten lava cake. With this recipe, stick to it to the T and don't under or overcook the cake for perfect results every time. 8 minutes is actually the magic number when it comes to making the perfect lava cake. This cake is the ultimate dessert delight - cakey and crumbly on the outside, and as you cut into it, the warm gooey chocolate oozes out. Make this recipe the next time you bake and you won't be disappointed.

Ingredients

  • Unsweetened dark chocolate bar, at least 70% cocoa - 100 grams
  • Eggs - 2
  • Honey - 3 tbsp.
  • Wholewheat flour - 2 tbsp
  • Oil - 1 tbsp
  • Baking powder - a pinch
  • Salt - a pinch

You will also need: Ramekins and a little chocolate powder

Method

  • The chocolate bar should be at room temperature, or you can also use chocolate chips. Break the chocolate bar into small pieces and melt it in the oven for 30 seconds at a time. The chocolate needs to be melted completely.
  • Preheat the oven at 180 degrees celcius. Grease the ramekins with a little oil and dust it with chocolate powder.
  • In the melted chocolate, add the honey, oil, flour salt, baking powder and whisk it till completely mixed.
  • Now add the eggs and whisk it well so that the egg mixes in the chocolate completely. The batter will be quite thick at this point.
  • The batter should be slightly thicker that your regular cake batter. However, if it is too thick then you can add a spoon of milk.
  • Pour the batter in the ramekins, filling it 3/4th of the way.
  • Place the ramekins in your preheated oven and bake it for exactly 8 minutes.
  • If you cook it any more than that, the cake will cook through and won't be molten lava cake.
  • Once done, take it out from the oven and let it sit for a minute or two before unmoulding.
  • You can serve it in the ramekins itself or unmould it.
  • To unmould, run a knife with gentle hands around the cake to loosen it from the ramekin. Place a plate on top and turn the ramekin over, holding the plate in place.
  • If you want, you can dust some powdered sugar on top, or even chocolate shavings.
  • Serve and eat immediately.
