Healthy dessert recipe – Cucumber cake

If you thought you could eat cucumber only in salads or sandwiches, here s a dessert recipe for you. Made using its skin as well, you ll be surprised at how good this tastes. This cake also has daliya or bulgur wheat which is good for diabetics. Here s the recipe. Also try bulgur wheat kheer.

Ingredients

  • Daliya (lapsi) 1 cup
  • Cucumber (with skin) 1 (big size)
  • Jaggery powder cup
  • Jeera powder tsp
  • Coconut (fresh) cup
  • Fresh curd cup (to adjust consistency)
  • Cooking soda tsp
  • Salt tsp

Method

  • Shred cucumber and add to daliya.
  • Mix in the coconut and jaggery.
  • Add salt, jeera powder, soda and curd.
  • Mix and keep aside for 10 to 15 minutes.
  • Microwave at 50% for 20 minutes.
  • Pierce with a knife to check if it is done.
  • Cut into slices.
  • Serve warm for breakfast or as a tea time snack.
