Healthy Christmas recipe: Apple Pie

The apple pie is an extremely popular and usually high in calories. It is a hot favourite for Christmas too. Go ahead and relish it without any guilt with this low calorie version made using digestive biscuits and low fat butter.

Baking Time: 20 mins

Baking Temperature: 150 C (300 F)

Makes 6 pieces

Ingredients

For the crust

  • Digestive or Marie biscuits, crushed 1/2 cup
  • Melted low fat butter 1 1/2 tbsp

For the apple filling

  • Digestive or Marie biscuits, crushed 1/4 cup
  • Melted low fat butter 1 1/2 tbsp
  • Brown bread crumbs 2 tbsp
  • Stewed Apple 1 recipe
  • Sugar substitute 3/4 tsp
  • Cinnamon (dalchini) powder 1/4 tsp
  • Raisins (kismis) 1 1/2 tbsp, soaked in 3 tbsp water

For the topping

  • Quick cooking rolled oats 2 tbsp
  • Low fat butter, melted 1/2 tsp

Method

For the crust

  • Combine the biscuits and butter in a bowl and mix well to form a crumbly mixture.
  • Spread this mixture on the bottom of a 150 mm. (6") diameter loose-bottomed cake tin and press well to form even layer.
  • Refrigerate till set.

For the apple filling

  • Combine the biscuits and butter in a bowl and mix well.
  • Add the stewed apples, bread crumbs, sugar substitute, cinnamon powder and raisins and mix well. Keep aside.

For the topping

  • Combine the oats with the butter and mix well. Keep aside.

How to proceed

  • Spread the prepared apple filling onto the crust evenly.
  • Sprinkle the topping on it and place in a pre-heated oven at 150 C (300 F) for 20 minutes.
  • Remove, cut into 6 equal pieces and serve warm.
