Healthy chicken satay recipe by celebrity chef Rakhee Vaswani

Celebrity chef Rakhee Vaswani shares an easy Oriental recipe -- Chicken satay.

If you are fond of Oriental cuisine, sticking to a fitness plan can be a tough task. Check the calorie count of your favourite Chinese food before you order it. However, if you just make the right choices and choose the healthier items from the menu, you ll be able to reduce your calorie intake. One such switch you can make is spring rolls over satay. Satay is grilled with minimal oil and hence is tastier and healthier than the spring rolls. Celebrity chef and culinary expert Rakhee Vaswani shares with us the recipe for a healthy chicken satay:

Ingredients:

  • 400gms chicken
  • 1 tsp roasted coriander seeds
  • 3 tbsp garlic paste
  • 2-inch pieces of lemongrass
  • 1 tsp fresh turmeric
  • 6 tsp sugar
  • 6 tbsp soya sauce
  • 6 tbsp lime juice
  • tsp oil
  • Salt to taste

Method:

  1. Cut the chicken into long strips and keep aside.
  2. Grind the coriander seeds, garlic paste, lemongrass, fresh turmeric, sugar, salt, soya sauce, lime juice and oil to make a paste.
  3. Marinate the chicken strips with the ground paste. Put them on skewers on a igag fashion and refrigerate for 2 hours.
  4. Heat a grill, brush the chicken with little oil and grill for 6-8 minutes.
  5. Serve with peanut sauce.

You can replace the chicken with paneer for a vegetarian version of the dish or make it with prawns if you like seafood. Satay is a healthy starter choice and a great dinner option with a bowl of healthy soup.
