Healthy breakfast recipe: Vegetable masala idli

Want to give your idli a healthy twist? Try this vegetable masala idli recipe. Made using dalia or bulgur, it can lower the risk of high cholesterol and diabetes. Capsicum in it speeds up your metabolism and detoxification process while spring onion protects against allergies, asthma, and heart disease as it has quercetin. Here s the recipe.   • Dalia (fine variety) 1 cup
  • Fresh curd cup
  • Mixed vegetables (finely chopped) cup
  • Spring onions (small bunch) - 1
  • Baking soda 1 tsp
  • Oil 1 tsp
  • Green chillies 2
  • Turmeric powder 1 tsp
  • Chilli powder - 1 tsp
  • Garam masala tsp
  • Curry leaves few
  • Mustard seeds tsp

Method

  • Chop vegetables and spring onions.
  • Soak dalia in curd.
  • Now, heat oil in a non-stick pan and add mustard seeds.
  • When they splutter, add curry leaves and spring onions.
  • Fry till they turn transparent.
  • Add green chillies, chopped vegetables, salt, haldi, chilli powder, garam masala and salt.
  • Mix well and saut and then keep aside to cool.
  • Add water to the dalia.
  • Add the vegetable mixture.
  • The consistency should be slightly thicker than that of idli batter.
  • Keep aside for 10 minutes.
  • Add baking soda to the dalia mixture and steam in idli moulds for 10 to 12 minutes.
