Making healthy and tasty breakfast is always a challenge. Fancy breakfasts demand a list of ingredients that are not easily available in the pantry. So here s a recipe that needs just the staples and can give such an amazing twist to the regular ingredient. It tastes like a cheese omelet sans the cheese and is a popular dish at home of the young and even the old. All you need is some eggs, bread and vegetables of your choice. On busy mornings, this can even double up as a kids tiffin recipe. So here s the easy recipe for no oil egg and milk uttapams or pancakes.   • Bread, 6 pieces
  • Eggs, 2
  • Milk, cup
  • Onion, 1 finely chopped
  • Tomato, 1 finely chopped
  • Capsicum, 1 finely chopped
  • Grated carrot, cabbage (optional)
  • Green chilly, 1 finely chopped
  • Red chilli powder, 1 tsp
  • Turmeric, 1 tsp
  • Salt to taste

Method:

  1. In a large bowl, tear the bread into uneven medium and small sized pieces. Add the chopped onions, tomatoes, capsicum and any other vegetables of your choice.
  2. Add two beaten eggs or break two eggs directly in the bowl and mix well. Add the milk and mix again.
  3. Now add all the seasonings and mix again to form thick pancake or uttapam like mix. The bread will absorb the milk and the egg will provide the binding texture to the entire mix.
  4. Leave this mix aside for 5 minutes. You can add a little more milk to adjust the consistency of the batter.
  5. Now on a hot pan or gridle, pour a ladle full of the mixture and spread it to make uttapams. Cook properly on both sides and serve with green chutney or ketchup.
  6. If you are making these on a non-stick pan, you may not require any oil. For other pans, few drops of oil should suffice.
  7. This makes for a great tiffin recipe too.

Tip:
