Healthy breakfast recipe: Poha parfait

I am a fan of yoghurt for breakfast. Besides increasing my daily calcium intake, it is very refreshing too. One of my favourite breakfasts is fruit andyoghurtt muesli. But after a while, I need variety. So I decided to use some other ingredient along with the fruit and yoghurt combination and add some more nutrients with seeds and nuts. This recipe of poha parfait is a no-cook dish. It s perfect for summers since it is a cold dish but you can choose to have it in winters too when fresh fruits are easily available. With just 10 minutes preparation time, it is an ideal busy morning breakfast recipe. You can even serve it as a dessert. So here s the recipe:

Ingredients:

  • 1 cup yoghurt
  • 1 cup poha
  • 1 cup apple
  • 1 cup mixed seasonal fruits
  • 1 tbsp mixed nuts (almonds, cashews, walnuts)
  • 1 tbsp black raisins
  • 1 tbsp mixed seeds (flaxseeds, pumpkin seeds, watermelon seeds, amaranth seeds)
  • 1 tbsp honey

Method:

  1. Rinse and soak the poha. Fluff it and set it aside while you prepare the yoghurt and other ingredients.
  2. Mix yoghurt and honey well.
  3. Add it to the poha and gently mix them together.
  4. Now for the finally assembling of ingredients, you can use glasses or bowls.
  5. Spread some mix fruits on the bottom, then a layer of the poha and yoghurt mix, top it with a spoonful of mixed seeds. Then spread a layer of apples and the poha mix. Make a final layer of fruits, nuts and black raisins and serve.
