Here are 8 reasons why you need folic acid. This breakfast recipe packs the goodness of all these nutrients and more. Soya nuggets are a tasty option for both vegetarians and non-vegetarians.

You can also add more veggies if you like. Here s the quick recipe:

Ingredients:

  • cup soya granules
  • tsp ginger-green chilli paste
  • cup onions, finely chopped
  • cup carrot, grated
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 tbsp urad dal
  • 1 tbsp lemon juice
  • Salt to taste
  • 1 tbsp coriander, finely chopped

Method:

  1. In hot water, soak the soya granules till they become soft. Squeeze out the water and drain it.
  2. In a pan, heat oil. Add the cumin seeds and urad dal and allow them to crackle.
  3. When the dal turns light brown, add the ginger chilli paste and stir. Add the onions and saute for 2-3 minutes.
  4. Once the onions are light brown in colour, put in the carrots and mix. Allow them to cook for 2-3 minutes.
  5. Add soya granules, salt and lemon juice and stir. Cook for another 2-3 minutes.
  6. Garnish with coriander and serve hot.

In case you do not have soya granules, you can chop the nuggets finely and use them.
