Healthy lauki and methi moong dal recipe

If bottle gourd (lauki) is not one of your favourite vegetables, try combining it with fenugreek (methi) to enhance its taste and make it healthier.

Bottle gourd (lauki) and fenugreek (methi) moong dal is a simple home recipe with the tinge of tamarind. Bottle guard is an excellent weight-loss food. Being high in fibre, it is recommended for people with high BP or other heart ailments.

Ingredients

  • Fenugreek leaves (methi) - 1 bunch
  • Bottle gourd (lauki) - 1 cup (cubed)
  • Moong dal - 2 cups
  • Onion - 1 (chopped)
  • Tomato - 1 (chopped)
  • Garlic - 1 clove
  • Green chilly - 1 (minced)
  • Tamarind paste - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Salt - to taste
  • Oil/Ghee - 1 tblsp
  • Mustard seeds - 1/2 tsp
  • Cumin seeds - 1/2 tsp
  • Curry leaves - 5-6
  • Dry red chillies - 2-3
  • Salt to taste

  • In a pressure cooker, take moong dal, methi leaves, bottle gourd pieces, onion, tomato, garlic, green chilly, tamarind paste, turmeric powder and salt.
  • Add a glass of water and pressure cook till it blows 2-3 whistles.
  • Once it is cooked, mash the dal using the back of the spoon.
  • Take another pan, heat some oil/ghee and splutter mustard seeds, cumin seeds, dry red chillies and curry leaves in it.
  • Add this to the cooked and mashed dal. Serve hot with rice or roti.
