Holi special: Healthy blue curacao lassi recipe

If you are allergic to colours or have sensitive skin, don t let it dim your spirit of this festival of colours- Holi. You can add colour to your plate with delicious colourful recipes like a beetroot salad for red, chana paneer curry for an orange, sarson ka saag parantha or palak fulka for green, coconut halwa for pink and a bright blue with the blue curacao lassi recipe. Blue curacao is a concentrate that is easily available at regular supermarkets and stores and can also be purchased online. Besides the lassi, you can enjoy it with soda or plain water too or make mocktails and cocktails from it.

Ingredients

  • 1 cup curd
  • 2 tbsp honey
  • 2 tbsp blue curacao concentrate
  • Water for required consistency

Recipe

  1. I have replaced sugar with honey to make the lassi a little healthier. I have also used homemade curd prepared from toned milk.
  2. Blue curacao has a sweet tangy taste, so 2 tbsp honey should suffice.
  3. Mix all the ingredients in a blender. You can add water to get the consistency you desire. Some of us prefer the thick lassi version while some like it runny. I prefer the latter so I added half a glass of water.
  4. Serve in a tall glass along with the other colourful dishes of the day.
  5. If you are not a fan of lassi, you can make a blue curacao shrikhand or blue curacao yogurt as this one fool proof and healthy way to add the colour blue to your plate this holi.
