Pumpkin or kaddu as it is known in Hindi, is extremely good for our health. It is loaded with fibre, low in calories, and a rich source of vitamin A,C,E. It also contains iron. But if you don't enjoy eating pumpkin, here's a soup recipe which has flavour and is also good for your digestive system as it is an Ayurvedic recipe. Gita Ramesh, author of the Ayurvedic Cookbook, shares this recipe with us from this book.
Yellow pumpkin soup
Serves 4-5 people
Ingredients
2 cups/500g yellow pumpkin (kaddu), washed, chopped with skin into discs
1 onion, large
2 green chillies
1-inch piece ginger (adrak)
2 garlic (lasan) cloves
tsp roasted cumin (jeera) seeds
Salt to taste
10 curry leaves (kadhi patta), finely chopped
Method
Put the yellow pumpkin in a pressure cooker along with onion, green chillies, ginger, garlic, roasted cumin seeds and 2 cups water. Pressure cook for about 10 minutes.
Take off the pressure and cool. Put into a blender.
After it is well-blended, put it back on heat and bring to boil. Season to taste.
Serve hot, garnished with curry leaves.
