Healthy and satisfying broccoli and potato soup

The high-fibre content in this soup makes it a good option especially when you want to detox. Being a good source of fibre, it can prevent constipation and other bowel conditions. Garlic helps keep bacterial and viral infections at bay as it contains high antibacterial, antiviral, anti-fungal and antioxidant properties. The antibacterial properties in garlic can also protect you against colds and sore throat. Potatoes are a rich source of carbohydrates and protein and can provide you with instant energy. This soup can make for a hearty meal when you team it with a whole wheat grain or a salad. What s more, you can have it as an accompaniment for both lunch and dinner. You may also want to try organic almond and broccoli soup.

You will need:

  • 2 cups chopped, boiled potato
  • 1 cup chopped broccoli
  • A dash of powdered black pepper
  • 225 ml vegetable stock
  • cup water

To prepare the oh-so-nutritious soup,

  • Mix the water and vegetable stock in a pan and place it over medium heat. Then add the potatoes.
  • Heat the potatoes until soft and then add the chopped broccoli and cook until the broccoli is soft.
  • Now transfer the mixture to a blender and blend the ingredients well. Just make sure that the potatoes are not mushy.
  • Then sprinkle some pepper powder and enjoy the soup hot.
  • If you like a thick creamy soup, add dollops of cream to your soup and garnish it with herbs or chopped coriander. You can also add bread croutons to your soup for a filling meal.
