Gudi Padwa special: Healthy fruit shrikhand recipe

An equally delectable alternative to the fattening shrikhand made using low fat curds, the fat count is in check. Additionally the fruits increase on the fibre count of this dessert. Enjoy a bowl of this to complete your meal this Gudi Padwa.

Preparation Time:
Makes 4 servings

Ingredients

  • a few strands saffron (kesar)
  • 2 tbsp warm low fat milk
  • (99.7% fat-free , readily available in the market)
  • 1 cup hung low fat curds (dahi)
  • 4 tsp sugar substitute
  • 1/4 tsp cardamom (elaichi) powder
  • 2 cups chopped mixed fruits
  • (apple , papaya , oranges ,
  • grapes , pineapple)

Method

  1. Combine the saffron and milk in a bowl and mix well till the saffron dissolves.
  2. Combine the curds, sugar substitute, cardamom powder and saffron-milk mixture and blend in a mixer till smooth.
  3. Refrigerate for at least 2 hours
How to serve
Place cup of mixed fruits in each serving bowl, top with cup of chilled shrikhand and serve immediately.
