Healthy recipe- Maple shrikhand with roast almonds

This yummy shrikhand contains zero sugar!

Raise your hand if you have already started gorging on Diwali sweets. There s nothing stopping us Indians when it comes to festivals and food. We don t mind going all out, eating and urging others to eat when it comes to the festive season. Our argument is that festivals are a time for celebration and indulging in good food. After all, the highlight of all our family get-togethers, poojas and dinner parties is food. But you can t let your revelry affect your weight loss goal. There is a way to eat healthy even when you re celebrating festivals like Diwali by making small changes. One great sugar alternative is maple syrup. A staple item on any Indian food thaali, shrikhand, is usually a hit with guests. You must try this innovative shrikhand recipe with absolutely no sugar by Chef Manish Mehrotra of Indian Accent. Also Read - Diwali 2019: 5 reasons why you must eat kaju katli without any guilt this festive season



Ingredients

Natural Yoghurt 400 gms

Maple Syrup 275 ml

Toasted Almond Flour 1 tbsp

Fresh Figs 1 no.

Fresh Cherries 3 -4 nos.

Toasted Sliced Almonds 1 tbsp

Method

1. Hang yoghurt in a muslin cloth overnight.

2. Reduce maple syrup over low heat till slightly thick (let 275ml reduce to 200ml). Let it come down to room temperature.

3. Mix the hung yogurt and reduced maple syrup with whisk till you get a smooth consistency.

4. Add the toasted almond flour and mix.

5. Pour the mixture into an earthenware bowl (or any bowl) and let it set in the refrigerator for about 3-4 hrs.

6. Garnish the shrikhand with the figs, fresh cherries (or any fruits in season) and toasted sliced almonds.
